Wow, it's been a while since I introduced a piece of culinary pottery that I'm this excited about.  This cassole from Castelnaudary is the traditional pot for cooking cassoulet, that mythic casserole that always contains beans, and usually many different pork, duck or goose morsels as well. That's right--cassoulet is neither low-calorie, nor vegetarian, nor any of that virtuous dietetic stuff.  What it is is one of those all-time great, viscerally satisflying dishes--which is undoubtedly there have been reams written on what constitutes the "real, authentic" cassoulet.  I usually make cassoulet about once a year in this pot, but the rest of the time I'm using it for just about everything I want to cook or braise in the oven.  This pot has incredibly thick walls that hold the heat and radiate it slowly and evenly.  Crusty edges, top and bottom guaranteed!  Available for now in Catalane red/bitter chocolate.  These are handmade, so every single one is slightly different.  Note this is the vase-shaped version, which provides slightly more surface area for browning on top.
