"Melon for preserves" isn't a very elegant name for
Citrillus lanatus, but it tells like it is. This member of the watermelon family must be cooked to be enjoyed. It is prized in Provence for making preserves, and if you ask me, I'll send you the recipe. The melons are about the size of a medium watermelon, oblong, with green skin traced with beige. The flesh is green and the seeds either red or green. The preserves are delicious! The seed for this plant has become nearly impossible to find in the U.S. Plant once the soil is thoroughly warm; start indoors in cooler zones. Makes a big plant; space them about 30 inches apart. Organic seed.
